King Cake with frangipane  by Nelly

This recipe is that of the galette des rois with frangipane, which we make in France for Epiphany.

 

Ingredients  

 

- 2 puff pastries  

- Almond powder  

- chopped almonds  

- vanilla flavoring  

-  butter

- 2 eggs  

- 1 sachet of vanilla sugar.  

- 1 egg yolk  


Preparation steps

 

On parchment paper, put puff pastry. In a bowl, melt 125 grams of butter in the microwave.  In a container, put 125 grams of almond powder, a sachet of vanilla sugar, a glass of water (25 cl) of water mixed with a cap of vanilla essence. Then add the melted butter and the 2 whole eggs.  Mix everything. For a slightly crunchy effect, I like to add a bag of chopped almonds.   Once well mixed, pour it onto the puff pastry.  Spread well over all the dough, leaving a centimeter on the side.  Take the second puff pastry on top of the other.  Take the edge of the two puff pastries to close the king cake .If you feel like doing it, you can use a knife to make a decorative design on the top dough.Brush the top with egg yolk.  Place in the oven at 200 degrees for 20 to 30 minutes.

It looks delicious! Personally, I prefer 'Brioche des Rois' because I live in the south of France, but Frangipane is fine too. I really enjoy the subtle taste of almonds!😘

I thank you for you comment. Yes, It's true that in the south it's " the brioche of king" . The cake has been revisited . I add the vanilla flavoring . I find the vanilla and almond combination is intersting and gives a sweeter taste to the " Frangipane".
