Shish Taouk skewers

My Grandma Fadilah always ordered taouk skewers with potatoes and tabbouleh... It was so good. I can remember the smell of this tray, and the taaaaaste. When you eat taouk, the only sauce you can take with is the garlic sauce. I never ate a sauce like that, it's the best, and you'll can't find one like that in the whole world. I've learnt to cook it, it took me a long time but now, I cook one by week because my family and friends love that.





Ingredients for 15 skewers :


  • 4,4 lb of chicken breast

  • 2 full-fat yoghurts

  • 2 lemons

  • 3 garlic cloves

  • a teaspoon of ginger

  • a teaspoon of oregano

  • a teaspoon of ras-el-hanout

  • a cup of olive oil


You have to cut the chicken into chunks.


Then make lemon zest with the 2 lemons and put all the ingredients with it, and mix.


Put the chicken in this marinade. I let this during 1 day in the fridge, sometimes 1,30 day. It's really better because the chicken is softer. In fact, you'll never see ras-el-hanout with taouk but I do like that and everybody loves.


After this day of marinating, you have to cook in a very hot frying pan to color the meat, and cook it softer after coloring, to preserve the chicken tenderness.

That looks and sounds delicious. I'm definitely going to cook that this week. Thanks for the inspiration. It's true how certain dishes remind us of family and home and past meals. I think chip butties is probably one of the dishes that reminds me most of being a kid. A chip buttie is basically a chip sandwich ie. chips and bread and butter. Yum!

Chip butties, I never ate that and didn't knew it existed, I'm sure my son would love it ! Taouk is my favourite dish, with garlic sauce (but only the lebanese one). I don't put origano most of time, because I prefer thyme. It's of course better on the barbecue but you can caramelize it on a frying pan. It's not easy to keep the chicken soft.
